Frequently Asked Questions

What is Drylaw?

Drylaw is an innovative UK-based spirits brand trading traditional methods for higher-quality ingredients and hyper-efficient fermentation and distillation processes. The result? Premium organic grape-based spirits with flavour and aroma profiles unlike anything else on the market.

While the spirit of the brand may be traditional, the methods for creating our product are bold, innovative and first of its kind. The way our grape-based spirits are made will flip the industry on its head.

Learn more about us.

How is Drylaw made?

We carefully source high-quality grapes that allow us to create stronger, more directed and ephemeral aromas and flavours without using unsustainable processes. Then, we analyse what flavours can be created using specific strains of yeasts that enhance the fermentation process for all the different types of grapes we have sourced. Using premium organic grapes allows us to create the ideal base wine. Employing such a high-quality base wine allows us to bring lots of different volatile and non-volatile aromas to life in our spirits.

Ultimately, we employ a low-temperature distillation process (below 30°C) under vacuum to retain the aromas created during yeast fermentation. Not only does this process protect and cultivate flavours and aromas that would typically be destroyed during traditional, high-temperature distillation processes (86% of them), it means we get to an end result faster and greener. After this process is complete, we transfer the product from the distillery plant to stainless-steel vessels and bottle them on site.

How do you drink Drylaw?

We combined the engineering principles to obtain superior efficiency with an understanding of nature that lead us to employ a variety of autochthonous microorganisms isolated from vineyards to develop more directed ephemeral aromas and flavours in our base wine.

As a result of our revolutionary cold-distillation process, we capture ephemeral scents, flavours and characters that hold court long into the night. This allows you to enjoy Drylaw spirits neat, on the rocks, with soda or tonic, or in a cocktail.

What percentage alcohol is Drylaw?

    How sustainable is Drylaw?

The production plant was developed with the 12 Principles of Green Engineering in mind. These principles emphasise efficient production processes and waste minimisation. It’s this efficiency combined with our use of high-quality raw materials that make sustainability a mere by-product of our process. That’s one by-product we can live with. Some call it innovative. We call it common sense.

Our premium organic raw materials and hyper-efficient processes mean we only use 0.3 kWh per litre of alcohol produced, as opposed to the 3 kWh average for electric pot still distillers. That’s a CO2 reduction of 1100%. And we produce none of the toxic waste that results from traditional methanol removal.

Learn more about our sustainability aspirations.

    How are Drylaw ingredients sourced?

Our ingredients are responsibly sourced from certified organic farmers and purveyors we know and trust. The organic grapes we use to create Drylaw spirits are concentrated and shipped to our premises in temperature-controlled trucks.

    Are Drylaw bottles recycled?

Our bottles are perfectly imperfect because we make them from 90%+ recycled glass. And they’re 100% more likely to find a second life as a decoration or vase.

    How is my order packaged?

Each order is placed in a plastic-free, recyclable, biodegradable and compostable sleeve that is made from over 85% recycled pulp. In addition to its sustainable traits, these sleeves are designed for the safe shipping of bottles.
